Cooking Class
On Thursday, January 24th, Reiko
Kawashima conducted the first of a series of Japanese cooking classes
in her home in Darien. Reiko announced these classes at the 2008 JSFC
Oshogatsu. Three “lucky” members attended the class: Diane Caminis,
Susie Littlefield and Atsuko Giampaoli. Reiko organized a wonderful
menu of miso soup, salmon sushi, potato and
beef stew, spinach with sesame, tofu marinated in olive oil, and
tofu/prosciutto spring rolls for the class to prepare.
After two hours of hands-on
preparation using “expert” techniques, and carefully chosen
ingredients, teacher and students sat down to a delicious lunch,
sampling the dishes they had prepared.
Reiko learned to cook from her mother, who owned a restaurant in Japan.
